Every bottle should taste like the place it was born

Castillo's Hillside Shire Winery began with a simple conviction: that great wine doesn't need a sprawling estate — it needs honest land, patient hands, and a deep respect for the growing season.

Nestled on the eastern slopes above Morgan Hill, our vineyard catches the late afternoon sun and the cooling marine breeze that rolls through the gap in the hills. Those conditions — warm days, cool nights — give our grapes a slow, even ripening that concentrates flavor without sacrificing acidity.

Today we produce limited quantities by hand. Every harvest is sorted twice. Every barrel is tasted weekly. And every bottle carries the name of a family that still believes the old ways are the best ways.
